Born in Accra, Ghana, in May 1999, Baidoo began his footballing journey with the Ghanaian club, Vision, where he spent two years before transferring to Danish side, FC Midtjylland, making his debut in the Danish Superliga fixture against FC Nordsjaelland in March 2018.
At the start of the following season, a loan move to FC Fredericia materialised, where he made 16 appearances before a second loan stint, this time with Norwegian outfit, FK Jerv, saw the midfielder on the move again. However, this time the loan move led to a permanent deal and Baidoo remained with his new side until the end of the 2020-21 season, making 40 appearances and scoring six goals before switching to Sandnes Ulf. 29 games for his new side saw his already burgeoning reputation grow as he also found the net four times. After six months at Sandnes Ulf, Swedish side Elfsborg swooped to capture Baidoo's signature at the start of 2022.
The Ghanaian flourished during his three years in the Allsvenskan, making 76 appearances and scoring 23 times. He was an integral part of the Elfsborg side that finished as league runners-up in 2023 and continued to impress on the wider stage during their 2024 Europa League campaign, scoring the only goal in a 1-0 win against Roma. In October 2024 he made his international debut off the bench in an African Cup of Nations Qualifier against Sudan that finished goalless.
At the start of January 2025, Baidoo joined Argyle for an undisclosed record fee, surpassing the amounts previously paid for Morgan Whittaker and Bali Mumba at the start of the 2023-24 season.
