Salford-born Grimshaw joined Manchester City's Academy at the age of 16 in 2014. After four years in the system, a first appearance for City's under-21s followed in October 2018 in the Football League Trophy at Tranmere in a 1-0 victory for the Blues' youngsters. After two more appearances in the same competition and a place on the bench in the first team for the League Cup game against Burton Albion, he signed a three-year deal with the Citizens in June 2018.
Five further Football League Trophy games followed during the 2019-20 season before a loan move to National League South side, Hemel Hempstead, materialised in January 2020, where he made seven appearances for the Hertfordshire-based side. A second loan move came to fruition in October 2020, when Grimshaw signed for Belgian First Division B side, Lommel SK, on a season-long loan, playing in 10 matches in total including making his full debut in a 1-1 draw with Westerlo.
Upon the expiration of his contract with Manchester City, Grimshaw made the move to Blackpool in July 2021, signing a two-year contract. In his first season at Bloomfield Road, he made the most of opportunities following injuries to Seasiders' captain, Chris Maxwell, making 29 appearances across all competitions, including a debut in a 3-0 League Cup win against Middlesbrough. At the beginning of the 2022-23 season, he signed a new, three-year contract with Blackpool and went on to make a further 18 appearances as the Tangerines suffered relegation to League One.
While making 47 appearances in all competitions during the 2023-24 season, Grimshaw firmly established himself as Blackpool's number one goalkeeper, keeping 18 clean sheets in a campaign that saw his side finish eighth in the table. He played his final match for Blackpool on August 17th 2024 against Stockport before signing for Argyle for an undisclosed fee just six days later, leaving Bloomfield Road with a total of 96 appearances under his belt. His debut for the Pilgrims came swiftly, in the League Cup clash with Watford at Vicarage Road, which was followed by his league bow for Wayne Rooney's side in an exhilarating 3-2 win at home to Sunderland.
Grimshaw went on to play 22 games in total for the club. If Michael Cooper was often remembered for his long and accurate throw outs, Grimshaw was the foot equivalent - as adept with the ball at his feet as many outfield players. However, following the 4-0 loss at Coventry City in December he lost his place to Conor Hazard having perhaps been unfairly blamed for at least one of the goals. He was to play only three further times for Argyle, when, the following month, Hazard himself was injured. Those three games resulted in two draws and a heavy 0-5 home defeat by Burnley.
During the summer of 2025, following Argyle's relegation from the Championship, Grimshaw elected to join Norwich City to return to that level. He signed a three-year deal, for a rumoured £600,000, meaning Argyle recouped their reported initial outlay. The move also reunited Grimshaw with new Norwich boss Liam Manning who had given him his professional debut whilst in charge of Lommel SK in Belgium.
