Born in Catford, London, in February 2004, Gyabi joined Cray Wanderers' youth setup, aged just eight years old. He spent three years with the Wands before moving to Millwall in 2015 to further his development. He enjoyed another three-year stint at his new club before a new opportunity arose in 2018 when he transferred to Manchester City.
International recognition followed for the youngster in 2019 as he made two appearances for England under-15s, along with eight appearances for the under-16s the following season. A debut for Manchester City under-21s in September 2020 in the EFL Trophy against Scunthorpe saw Gyabi take his first steps in his fledgling domestic career, with two more appearances in the same competition added to his belt by the turn of the year. Opportunities for the central midfielder were limited in City's setup, the 2021-22 season seeing him make just the solitary appearance in the EFL Trophy away to Doncaster, along with two games for England under-18s.
In July 2022, he moved to Leeds for a reported fee of £5 million as part of the deal that took Kalvin Phillips to the Etihad. Three matches for Leeds under-21s in the EFL Trophy preceded an EFL Cup debut as Leeds bowed out of the competition to Wolves in a 1-0 defeat. In December 2022, Gyabi made his Premier League debut for the Elland Road club in a 3-1 loss to his former employers, Manchester City, as he came off the bench in the 83rd minute. 2023 began with another cup appearance, this time at Cardiff in the FA Cup, while the remainder of the season saw him make four appearances for England under-19s. In May 2023, he was included as part of the England under-20s World Cup squad, playing and scoring in the group game against Uruguay before also featuring in the Round of 16 defeat to Italy.
In January 2024, in search of game time, Gyabi became new manager Ian Foster's second signing when he joined Argyle on loan until the end of the season. Six months later, the 20-year-old returned to Home Park for a second loan spell, again until the end of the season, but this time under the guidance of new manager Wayne Rooney. He scored his first and only goal for Argyle in a 3-3 home draw with Middlesbrough in December 2024.
Following Wayne Rooney's dismissal on New Year's Eve 2024, Gyabi remained under new manager Miron Muslic, as Argyle tried to maintain their Championship status. Despite somewhat shoring up the defence and their cup run heroics, Argyle failed to stay up and a mass exodus followed at Home Park post-relegation, with Gyabi returning to his parent club, Leeds United.
On the last day of the summer transfer window of the 2025-26 season, on the first day of September, it was announced that Gyabi had signed for Championship side Hull City, permanently, on a three-year deal. In total, he had made five appearances across three seasons at Elland Road, including a solitary Premier League appearance in 2022-23.
