Born in Hemel Hempstead, Hitchcock began his career with Blackburn Rovers in 2004 when his father, former Chelsea 'keeper Kevin, was coaching at the club. He progressed through the ranks at Ewood Park and broke into the Rovers reserve team in 2009 after impressing for their academy side. It was during a reserve fixture that the striker was first spotted by Peter Reid and he joined Argyle in July 2011 on a three-month loan, despite interest from several other clubs, after impressing during a pre-season trial.
Hitchcock played ten times during his time with the club but failed to score, and he was returned to Ewood Park earlier than expected. Still without a first team appearance, his Rovers contract was cancelled in February 2012, but a month later he surprisingly signed a one-year deal with Premier League Queens Park Rangers, reuniting with one of his former Ewood Park mentors, Mark Hughes. He made just a single league appearance for the Loftus Road side but it was an impressive one, coming on as a substitute for Bobby Zamora in the 83rd minute against Ipswich Town and scoring the winner in the 90th minute.
At the start of the January transfer window in 2013, Hitchcock joined Argyle's League Two rivals Bristol Rovers on loan, making his debut in the Pirates' New Year's Day home win against Argyle, which turned out to be Carl Fletcher's last game in charge of the Pilgrims. He then moved to Crewe Alexandra, scoring three goals in six appearances before moving on again in January 2014 to join Rotherham United on loan for the remainder of the season. He scored five goals in 11 games for the Millers, including the first hat-trick of his professional career, helping Rotherham to win promotion to the Championship.
Hitchcock was released by QPR on his return to Loftus Road, and in July 2014 joined Milton Keynes Dons on a three-year deal. After just six league appearances for the Dons he moved to Fleetwood Town on loan in October 2014, scoring three minutes into his debut. After six league appearances and scoring that single debut goal, he returned to MK Dons in January 2015 and then had two further loan spells with Stevenage and Crewe Alexandra, his second time with them.
Hitchcock was released by MK Dons at the end of the 2015-16 season, and in January 2017 he signed for Boreham Wood in the National League on a short-term contract until the end of the 2016-17 season. Firmly in the non-league ranks, his nomadic career continued with spells at Chelmsford City, Biggleswade Town, Chesham United and Harlow Town.
