Durham-born Gibson spent his formative years at the Newcastle United academy before making the move to Everton close to his 17th birthday. He made his first appearance for his new club in the Football League Trophy in August 2017 in a 2-1 defeat at Notts County and within two months of joining the Toffees, he was part of the England under-17 squad that won the World Cup in India playing alongside the likes of Phil Foden. International appearances at under-18 and under-20 level followed.
A six-month loan move to Fleetwood Town in January 2020 saw the young centre-back enjoy his first taste of league action as he made his senior debut in a 2-1 win over Doncaster Rovers. He went on to make 11 appearances in total for the Cod Army before joining Reading for the following campaign. In June 2021, he joined up with Darren Moore at Sheffield Wednesday, where injuries restricted his game time to just a handful of appearances for the Owls. The 2022-23 season would prove to be his most prolific campaign in terms of matches played, a reunion with former manager, Joey Barton, seeing him make 33 appearances for Bristol Rovers (29 starts and four appearances from the bench) with a solitary goal coming as the Gas triumphed 2-1 over his previous employers, Fleetwood Town.
In May 2023, at the age of 22, Gibson returned to Everton and was offered a new contract, which he turned down to sign for the Pilgrims two months later on a free transfer. His Argyle debut came at Home Park in the opening fixture of the 2023-24 campaign against Huddersfield Town and he immediately impressed during the early part of the season. He went on to make 44 appearances in all competitions and was a vital cog in the defence during the latter fixtures as Argyle secured their Championship status on the last day of the season.
He continued to star as an integral part of the Argyle defence at the beginning of the following season and was given the captaincy of an injury-hit side on numerous occasions. Despite being part of a back line that was on the receiving end of a handful of heavy defeats, his performances caught the eye of a number of interested clubs. His solitary goal in Argyle colours came in the 3-3 home draw against Middlesbrough in his 61st appearance for the Pilgrims.
At the start of the January 2025 transfer window, after just two more games for Argyle, Preston North End made a bid that triggered a release clause in Gibson's contract and he made the move to Deepdale for a significant seven-figure fee.
